Living in the City, I was gaga for Thai restaurants and those summer rolls with peanut sauce. Now I make my own. I found some rice paper to wrap them, some soba noodles to roll inside with some local lettuce and here is the simple sauce recipe for dipping:
To a saucepan add:
- 1 cup coconut milk (usually you can find a can at the market)
- 1/2 cup peanut butter
- 1Tablespoon sugar
- 1Tablespoon soy sauce
- 1Tablesppon curry powder
Whisk in:
- 1/2 cup hot water
- Simmer 20 minutes
- Stir in 2 teaspoons lime juice.
